Ingredients for Polish Apple Cake

2 ¾ cup flour
1 cup confectioner’s sugar
4 egg yolks
¼ teaspoon salt
2 ¼ lb apples
½ cup sugar
cinnamon, nutmeg or ground cloves for flavor
4 tablespoons vanilla wafers
1 teaspoon vanilla sugar

Directions for Polish Apple Cake

Combine 2-3/4 c flour with 1 c confectioner’s sugar, 4 egg yolks and 1/4 t salt and blend ingredients into a uniform dough. Do not knead! Roll into ball, wrap in foil and refrigerate at least 30 min.

Meanwhile, in pot combine 1 lb tart cooking apples, peeled and sliced, with 1/2 c sugar and simmer on low heat until apples are tender. To cooked apples add 1-1/4 lb peeled, diced or sliced uncooked apples. Season with several pinches cinnamon, nutmeg or ground cloves or a combination of any 2 or all 3 (1 pinch of each). Several T raisins and or 1 T diced candied orange rind may be added to apple mixture.

Divide chilled dough in 1/2. Roll one half out thin into a rectangle or square to fit your baking pan. Pierce all over with fork and bake in preheated 390° oven 10-15 min.

Sprinkle surface of baked dough with 3-4 T crushed vanilla wafers and spread apple filling evenly over surface. Season with 1 t vanilla sugar.

Roll out remaining dough half and cover apples.

Reduce heat to 350° and bake about 45-60 min.

Serving Suggestions
Slice cake into squares after it has cooled. If the apple filling seems too tart, dust cake with confectioner’s sugar. Each portion may be topped with a dollop of real whipped cream just before serving. Alternatively, cake may be heated and served with a scoop of vanilla ice cream for a more Americanized version of the dessert.

  • 2 sheets (1.1-pound package) frozen puff pastry dough, thawed
  • Confectioners’ sugar

  • Heat oven to 400 degrees. Roll out each piece of puff pastry slightly to blend the seam lines. Without cutting all the way through, lightly score each pastry sheet into 9 sections. Sandwich each puff pastry sheet between two pieces of parchment paper and two cooling racks. This will keep the pastry flat but still flaky. Bake 15 minutes, remove top rack and top sheet of parchment paper. Replace rack and continue to bake until golden and crispy throughout, about 15 more minutes. Cool completely.

(If you like a thick layer of filling, make a double batch of Pastry Cream.)

  • Using a 13×9-inch pan as a mold, place one layer of cooked puff pastry in the bottom of the pan. Pour hot pastry cream over it, and place second layer of cooked puff pastry on top. Refrigerate until set. When ready to serve, using the prescored marks as guides, cut into 9 pieces. Dust each piece with confectioners’ sugar.

Take the pan off the heat and plunge it into an ice-water bath or, if you have lumps, strain it through a sieve into a pan or heatproof bowl set in ice water.

The 21st Annual Polish Pottery Festival in Boleslawiec, Poland

Yesterday kicked off the 21st annual Polish Pottery Festival in Boleslawiec, Poland. Featuring brilliant pottery and sculptures made by local manufacturers and artisans, this festival is one of the largest events in Europe. It is expected that nearly 100,000 people will be in attendance this year. Event-goers will be able to choose from thousands of items to purchase while participating in exciting hands-on activities. Local manufacturers will be opening up their warehouses for tours and demonstrations. There will be large open-air kilns in which guests will be able to watch the firing process first hand. Attendees can also participate in the Pottery Animation Town, a workshop presented by local pottery masters that allows the participants to create pottery using the potter’s wheel and hand-building techniques. Guests will be able to paint and decorate their own pottery as well.

The Great Pottery Parade will occur on Friday, after which the Mayor will present the Pottery Fraternity with the keys to the city. Other fun events include electing the Miss and Mister of the Pottery Festival. Numerous musicians will perform throughout the massive five-day festival.

Delicious Polish Egg Bread Recipe This fantastic recipe brings Poland right to your door. This wonderful bread can be enjoyed all year round and is great for the holidays.

Ingredients for the Delicious Polish Egg Bread Recipe:

5 packages active dry yeast
2 cups lukewarm water, divided
1 quart whole milk
1 cup butter, cut into pieces
1 1/2 cups superfine sugar
2 tablespoons salt
1 teaspoon salt
10 eggs, room temperature
5 pounds bread flour

Directions for Polish Egg Bread:

Dissolve yeast packages in 1 cup of warm water; set aside.

Bring milk to a boil. Remove from heat; add remaining 1 cup water, butter, and 2 tablespoons plus 1 teaspoon of salt; stir until butter melts. Pour in sugar and stir until dissolved.

When milk mixture has cooled to lukewarm, stir in dissolved yeast.

In a separate bowl, beat eggs until combined. Whisk milk mixture into eggs. Gradually add 5 pounds of flour.

Transfer dough to a floured work surface, and use a serrated knife to divide dough in half. Shape each half into a ball and place the dough in two large oiled bowls. Cover with greased plastic wrap and let rise in a warm place for about 1 1/2 hours.

Preheat oven to 325 degrees F (165 degrees C).

Once risen, turn dough out onto a well-floured surface and divide into 6 equal portions. Shape the dough into balls. (Dough will be very sticky and soft at this point.) Keep the dough covered with greased plastic wrap while you divide one dough ball into 3 pieces. Shape the dough into three ropes, braid together, and place on a lightly greased baking sheet or parchment-lined baking sheet.

Repeat with the remaining loaves. You should be able to fit two loaves per baking sheet.

Bake loaves in the preheated oven for 35 to 40 minutes, or until hollow-sounding when tapped on top. Let cool, and enjoy!
